DESIGN YOUR OWN FRITTATA
Frittata Mixture
2 tablespoons oil
3 large eggs
2 tablespoons sour cream
60 grams grated cheddar cheese salt and pepper
Vegetables (pick 3)
Zucchini
Pumpkin
Sweet potato
Potato
Onion
Capsicum
Broccoli
Carrot
Method
Preheat oven to 220°C.
Line a large roasting pan with baking paper. Place vegetables in pan. Spray with oil. Spread out in a single layer and roast for 30 minutes or until light golden and tender.
Reduce oven to 210°C. Whisk eggs, sour cream together in a bowl.
Stir through the roasted vegetables., grated cheese and salt and pepper.Heat one tablespoon of oil in a clean, dry ovenproof frying pan over a medium heat.
When the oil is hot, pour in the frittata mixture. Shake the pan gently to allow the mixture to spread evenly over the base of the frying pan.
When the edges of the frittata are set and beginning to brown, place in the preheated oven for 3 – 5 minutes until the frittata is golden brown on the top.
Remove from the heat and allow to rest for 5 minutes.
Slice into wedges and serve warm.
