1 tsp vegetable oil 1 tsp finely grated fresh ginger 1 garlic clove, finely chopped 25g coarsely chopped green cabbage 1 tbsp water 100g pork mince 1 stalk coriander, leaves picked, stalk finely chopped ½ tablespoon soy sauce 1 teaspoon caster sugar ½ teaspoon sesame oil 12 gow gee wrappers Dumpling Method Heat vegetable oil in a saucepan over medium heat. Cook ginger and garlic, stirring, for 1 minute or until aromatic. Add cabbage and water. Cook, stirring occasionally, for 3 minutes or until the cabbage wilts. Transfer to a bowl. Set aside to cool. Stir in pork, coriander, soy sauce, sugar and sesame oil. Season with salt. Place 1 wrapper on a clean work surface. Place 2 teaspoons of pork mixture in the centre of the wrapper. Brush edges with water. Fold over to enclose filling. Pinch edges together. Place on a tray lined with non-stick baking paper. Repeat with remaining wrappers and pork mixture. Broth ingredients
1 Litre chicken stock 1 small piece of ginger ½ tbsp soy sauce 1 tbsp black vinegar 1 tsp dark sesame oil ½ tsp sugar 1/2 carrot 2 spring onions ½ cup spinach leaves Broth method Put the stock, ginger, soy, vinegar, sesame oil, sugar and salt in a soup pot and bring to a boil over high heat. Adjust the heat so the broth simmers and cooks to lightly flavor with ginger, about 10-15-minutes. Add the carrots, and simmer until tender and cooked through, about 5 minutes. Just before serving, add the dumplings, cook for 3-4 minutes, stir in the spring onions and spinach and cook until the greens wilt, about 1 minute. Divide among warm bowls to serve. Serve with chili sauce on the side if desired. |
