Berry Compote
Ingredients 100g Frozen Berries 1 tbsp caster sugar Method Place sugar and 1 tablespoon of cold water in a small saucepan. Stir over low heat until sugar dissolves. Increase heat to high. Bring mixture to the boil. Cook for 3 minutes or until mixture thickens slightly. Remove from heat. Stir in berries. Set aside. French Toast Ingredients 2 slices fruit bread 1 egg 1 tbsp milk 1 tbsp cream 1 tbsp caster sugar ¼ tsp cinnamon 10g butter Method Place eggs, cream and milk in a bowl. Whisk until combined. Combine sugar and cinnamon in a shallow dish. Melt half the butter in a large, non-stick frying pan over medium heat. Dip bread, 1 at a time, in egg mixture until soaked. Cook bread for 2 minutes each side or until golden brown. Remove from pan. Toss in sugar mixture to coat. Cover to keep warm. Repeat with remaining butter, bread, egg mixture and sugar mixture. 2 eggs 2 tsp sugar 210ml milk 125g flour To make batter, crack eggs into milk and add sugar in a mixing bowl and whisk until sugar has dissolved. Sieve the flour into the base mixture and whisk continuously. If too thick, add more milk, a little at a time. Rest 15 minutes Heat a large pan over high heat. Pour in just enough batter to cover the pan, and rotate quickly using a circular motion to create a thin crepe. Reduce heat to medium and cook for 2 minutes. Turn and cook for another 2 minutes or until browned. Fold in half, then half again. Transfer to a serving plate, and spread with berry compote. |
Pain PerduIn France, French toast is called pain perdu, which means "lost bread" in French. It is called "lost bread" because it is a way to reclaim stale or "lost" bread. The hard bread is softened by dipping in a mixture of milk and eggs, and then fried. The bread is sliced and dipped into a mixture of egg, milk, sugar, cinnamon and vanilla. The slices are pan-fried in butter and traditionally dusted with powdered sugar and served with jam or syrup on the side.
In France, pain perdu is considered to be a dessert, a breakfast as well as an afternoon tea snack. CompoteCompote (French for "mixture") is a dessert originating from medieval Europe, made of whole or pieces of fruit in sugar syrup. Whole fruits are cooked in water with sugar and spices. The syrup may be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, other spices, ground almonds, grated coconut, candied fruit, or raisins. The compote is served either warm or cold.
