Raspberry and Coconut slice100g butter, softened
1 cup (220g) caster sugar 3 eggs 1 cup (150g) plain flour 1/2 cup (160g) raspberry jam 400g can pitted black cherries, drained, halved 2 cups (150g) shredded coconut 1 cup (80g) desiccated coconut Preheat oven to 180C. Grease and line the base and sides of a 19cm x 29cm slice pan with baking paper, allowing the 2 long sides to overhang. Use an electric mixer to beat the butter and half the sugar until pale and creamy. Add 1 egg and beat to combine. Add the flour and stir to combine. Spoon into the prepared pan and smooth the surface with the back of a spoon. Bake for 20 mins or until golden brown. Spread the jam evenly over the base. Arrange the cherries over the jam. Use a fork to whisk the remaining eggs and the remaining sugar in a medium bowl. Add the combined coconut and stir to combine. Sprinkle evenly over the cherries. Bake for 25-30 mins or until lightly golden. Set aside in the pan to cool completely. Cut into squares to serve. |
Chocolate and Walnut BrownieIngredients
200g DARK CHOCOLATE, CHOPPED 250g BUTTER, CHOPPED 1½ CUPS (265G) BROWN SUGAR 4 EGGS ⅓ CUP (35G) COCOA POWDER, SIFTED 1¼ CUPS (185G) PLAIN (ALL-PURPOSE) FLOUR, SIFTED ½ TEASPOON BAKING POWDER 100G DARK CHOCOLATE, CHOPPED, EXTRA 100G WHITE CHOCOLATE, CHOPPED 100G UNSALTED WALNUTS, CHOPPED Method Preheat oven to 160°C (320ºF). Place the chocolate and butter in a small saucepan over low heat and stir until melted and smooth. Place the sugar and eggs in a bowl and stir to combine. Add the chocolate mixture and stir to combine. Add the cocoa, flour and baking powder and stir to combine. Fold through the extra dark chocolate, white chocolate and nuts. Pour the mixture into a lightly greased 22cm-square cake tin lined with non-stick baking paper. Bake for 50 minutes or until cooked when tested with a skewer. Cut into squares and serve with ice-cream. |
